Humble Pie


We were so pleased with this pie. It is so easy to make and incredibly delicious!

Prep Time: 30 minutes

Cooking Time: 1 hour

Refrigeration Time: 30 minutes


Ingredients • Serves 8


2 2/3 ounces of dairy-free butter

4 1/4 ounces of sugar substitute or turbinado sugar or sugar of choice

3 1/2 ounces of ground walnuts

3 apples

2 pears

2 peaches

1 tbsp all-natural vanilla extract (I love vanilla so you can use less if you’d like)

pinch of cinnamon

1 pie crust (we use a homemade gluten-free recipe) or you can buy a ready made crust


1) Preheat oven to 350.


2) Prepare the crumble dough that gets put on top of the pie: start by cutting butter into cubes. In a bowl, combine: sugar and flour with the ground walnuts. Mix with the tips of your fingers then crumble the mixture into small pieces and refrigerate for 30 minutes while working on the rest of the pie.


3) Peel, core and cut the apples, pears and peaches. Pour the apple, pear and peach cubes into a pot, add the vanilla and cinnamon. Cook over medium heat for 30 minutes, stirring to evaporate the water from the fruits to obtain a compote.

4) Place the pie crust in a pie or tart pan. Line the bottom of the pie with the apple-pear-peach compote. Bake the pie for 20 minutes. Remove from oven and increase temperature to 400. Sprinkle the cold crumble over the entire pie and bake for 10 more minutes.


5) Let cool.

Pairs incredibly well with ice cream!
